When oxygen is not present, pyruvate undergoes a process called fermentation. In the process of fermentation, NADH + H+ from glycolysis will be recycled back to NAD+ so that glycolysis can continue. In the glycolysis, NAD+ is reduced to form NADH + H+.

If insufficient oxygen is available, acid is broken down anaerobically, producing lactate in animals and ethanol in plants and microorganisms.
